First Trip in the New Camper

We always think we are good guests. We bring our own towels and sheets… an extra refrigerator, and of course our own bed and bathroom – when you think about it, we bring our own house. On the down side, I suppose we use a large amount of driveway space and we have two large collies. We, of course, prefer to tally the dogs on the good guest side of the ledger.
A few weeks ago I broke my foot and was unable to go on a planned trip to Buffalo for our first journey in the new, as yet unnamed camper. Ultimately, I was glad because Jon and Ryan invited both dogs, Sully and Frida, to their home in the Poconos for a five day Memorial Day weekend and allowed us to come along. Of course we were delighted to accept.
There are sights to be seen and many things to do near their home in the Poconos. Bushkill Falls, the Delaware Water Gap, Mount Minsi and Appalachian hiking trails, the Pocono Bazaar/ Flea Market, white-water rafting and the Poconos Indian Museum located just a short walk from their house. In the 11 years we have been visiting them we have rarely felt the need to leave their comfortable home or beautiful gardens on the shores of Lake Werry to see or visit or hike anything.
Occasionally we have been stuck in the huge traffic jams for the flea market. Jon and Bernie golf several times a year at a near-by course. But mostly we enjoy the beauty and peace that surrounds their home.
Or is it possibly all about the food? They cook meals. Real meals. Delicious meals. Healthy meals. This time the menus included Grilled Salmon, Bar-B-Qued NY Strip Steaks with baked sweet potatoes and salad, Chicken Curry with Dal and Puri bread, a party for friends and family with burgers and dogs with homemade potato salad. crudite...linguini with white clam sauce. Fresh strawberry sundaes with whipped cream. Breakfast of fresh blueberry pancakes with maple syrup, cantaloupe and lots of bacon. Every thing heavenly. There were Cosmopolitans and Margaritas and wines and “apple Juice”. Jon has a great recipe for Cosmos:
Jon's 4-2-2-1 Cosmopolitan
- 4 C vodka
- 2 C triple sec
- 1 cup fresh lime juice
- Freeze it or serve on the rocks (serves 2)
